Pomegranate, Pear & Pecans

So after weeks of snacking on junk food, I've been craving some extra greens in my system! This Pomegranate and Pear salad is the perfect combo of sweet & tangy. Honestly these pics don't do it justice, as the rest of the dressing was added after, to avoid sogginess (oh the joys of photography!). Thank you to my little sis for bringing me some pecans, I'm obsessed with this brain food! If these exist in Libya please let me know!

I plan on eating one salad a day just to make sure I'm getting some raw veggie goodness. I know I sound like I'm on loop on this blog, but no matter how many times I fall off the bandwagon, I'm ready to pick myself up, and get back on! Eating healthy is actually easy for me, it's the snacking on processed junk that throws me off. Strangely I've been losing weight, which means I don't have anything other than health to discourage me from reckless eating.  I dislike trying to promote something that I'm not able to accomplish first. Sometimes I have to be a hypocrite on here in order to encourage myself as well . I guess persistence is the key factor here. 

If any of you have wholesome recipes, or exciting salad recipes please do share. There's plenty of ingredients I can't get here so keep that in mind. I love all food, so I'm easy to please! 

Pomegranate, Pear & Pecan Salad 

2 handfuls of Lettuce leaves
1 handful Fresh Spinach leaves (I didn't have any so used rocket)
1/2 of a Pear
1/2 cup of Pecans or Walnuts
1/2 cup Feta cheese (cubed or crumbled)
1/2  of a Pomegranate 

1 tablespoon Lemon juice
1 tsp Dijon mustard
1/2 tablespoon Honey
1/2 tablespoon Olive oil 
Pinch Black Pepper

Just toss them all together, and top it off with the dressing. There's many variations of this recipe online, with different dressings (including vinegar), or walnut & apple. The idea is you get some sweet-tangy freshness perfect for any season!

I can definitely understand why this world wide web is so addictive. You get to meet amazing people, and have opportunities like no other. Thank you for reminding me this world isn't all bad!


  1. I had a pepper, capers and peach salad the other day! Although I wasn't a fan of the dressing they used, I loved the contrast in flavours of the fruit and veggies.
    When making salads at home, I tend to find beetroot does the job perfectly for me!

    1. Hmmm...I've still not tackled the beetroot phobia. The redness creeps me out. Funny you had to mention the one thing I 'dislike'. Is it a dislike if you've never really properly tried it? Haha

      I love the idea of peach in salad, going to try it out :) xx
